Grandma Tregidga's Coleslaw recipe
This week we would like to share our Grandma's coleslaw recipe. This is a real favourite of ours and we always have a jar of it in the fridge for a quick lunch with some beetroot and goat feta.
Grandma Tregidga's Coleslaw recipe
(written as she verbally told it to Mum one day many years ago)
1 cabbage chopped (sprinkle 1 tablespoon of salt over and leave for 2 hours, then drain)
2 onions chopped
4 carrots grated
4 stick's celery chopped
2 red or green peppers chopped
Mix with drained cabbage then sprinkle 1 teaspoon each of celery and mustard seeds over.
Boil slowly the below in a saucepan
1 cup sugar
1 cup vegetable oil
1 cup while vinegar
2 teaspoons dry mustard
Pour over veggies while hot. Mix well and leave for 3 days before using. Will keep for 3 weeks in the fridge.
